Tartaric, Malic and Citric acid are the primary acids, naturally found in wine grapes. While Lactic, Succinic, Acetic and Butyric acid are the fermentation acids. Tartaric and Malic acid are fixed acids means they do not evaporate upon heat while acetic acid is a volatile acid which evaporates upon heating and can contribute to the wine fault ”volatile acidity.
But small amount is useful because it lift up flavors.
